St. Lucia 1931

A blend of rums from a Coffey column still and three copper pot still distillates from 1999 and 2004, bottled at 43 percent abv, opens with oak and honey, dried fruit and vegetal notes, hints of tobacco and dark chocolate, the palate begins surprisingly dry, then evolves to a complex bouquet of raisin with tones of oaken vanilla before a hint of roasted nut with a long and warm and slightly sweet finish.
