Overproof rum is a strong spirit. Most rums sold in the United States are bottled at 80 to 100 proof, or 40 to 50% alcohol by volume. Some exceptions are rums bottled at 125 to 160 proof or more. They’re also used in cooking recipes that call for rum to be ignited in flame (flambé) or drinks that blend a very strong rum into their recipe. - The classic dark overproof rum no longer available in the USA opens with aromas of cherry cola and dark fruit stew, molasses and caramelized muscovado sugar, hints of sherry, raisin and black currant, a balsamic note, birch bark, and dark roasted coffee. On the palate, it's warm, not hot with initial cola, birch, and sweet black fruit, drying out as expected. Surprisingly rich flavors overwhelm initial heat which builds big warmth in mid-palate, before revealing a long earthy wood note into the fade, before the after taste hints of cherry cola.
